“This Mexico Oaxaca FTO Unecafe Royal Select Water Decaf is curated from lots selected based on cup profile and potential to express excellently once decaffeinated. Green coffee is pre-soaked in water to expand the beans for caffeine extraction. Once the coffee is hydrated, it is then introduced to a unique solution of concentrated coffee solubles that draw out the caffeine while keeping the flavor compound loss to a minimum. Then it is re-dried and re-bagged and the solution is filtered of its caffeine to be used again. ”
